Black fungus or wood ear mushroom is an edible fungus that is commonly used in Chinese cuisine. It is often in dehydrated form when you find them in Asian market. In preparation, you need to soak them in water and rehydrate them. They tend to expand about 3x their dry size, so keep that in consideration when rehydrating. Once they are rehydrated, they became soft with a little crunch in texture with a very subtle grassy flavor. They need to be cooked to be consumed.
