Rock sugar is an extremely popular ingredient in Chinese cuisine. They are in the form of irregular chunks, and it ranges in color from pale gold to white. It is made from concentrated cane sugar extract thru a lengthen process. They are first boiled then left in a container to crystallize; it usually takes about a week. Once they are formed, they are removed and crushed into smaller pieces for sale. The molasses is removed from cane sugar during the refining process, the rock sugar looks white. Rock sugar creates a lovely sheen in sauces and braises delicate flavor that other type of sugar cannot do. It can also be used as sweetener for your tea and coffee. This product is locally sourced in Southern California in an FDA approved facility.
