Shaoshing Rice Cooking Wine is used as an ingredient in Asian dishes, especially Chinese cuisine. It is made from fermenting and distilling rice, where the rice starch is converted to sugars. It is used to marinate meat and fish to alleviate their odor and add to a dish to bring up the flavor. It is as important as soy sauce and oil in Chinese cuisine. It is not intended to be consumed as beverage and the alcohol content of this brand is 15%. By US law, it is treated with salt (1.5%) which acts as a preservative to inhibit the growth of microorganisms that produce acetic acid.
